Grilling means no fuss, more flavour and much more fun. Nothing tastes quite as good as sizzling food with smoky aromas hot off an open fire or barbeque. It's all about having fun but without a certain degree of know-how grilling can mean charred steaks, scorched chicken and burnt burgers. During this intensive one-day course we explain the importance of good marinades, salsas, flavoured butters and oils in barbecue cooking. Lots of exciting new recipes will introduce both the novice and seasoned barbecue buffs to the thrill of the grill. Juicy sausages, kebabs and satays are great, but how about hamburgers with avocado sauce, butterflied leg of lamb, spare ribs, chicken breasts with lemon and ginger, barbecued mackerel with green gooseberry sauce, tomato and coriander fondue, goat's cheese in vine leaves, bananas wrapped in streaky bacon.
